Sweet Corn fritters, Pancakes and Potato patties


Sweet Corn Fritters a la Ann


The first time I had Sweet Corn fritters was at a very cold campsite on the western side of the Drakensburg mountains in South Africa back in 1989.
Ann surprised us all one evening with these fritters and they were so nice we requested a second batch. They have been a favorite since.

Ingredients:
   1 tin of sweet corn.
   1 egg.
   ¼ teaspoon salt.
   Pinch of baking powder.
   About 1½ cups of all purpose flour.
   Cooking oil for frying.

Method:
Empty the sweet corn into a mixing bowl, add the salt and baking powder. Mix well.
Add enough flour to end up with a batter that only just slides off a steel tablespoon.
Heat the oil in a pan, (use a deep frying pan or pot if out at sea), over medium heat, spoon tablespoon size amounts into the hot oil.
Fry patties until golden brown on both sides.

Notes:
Enjoy as is, or drizzle golden syrup over them for a sweet delight.
You can also add herbs and/or mashed garlic and/or finely chopped onion to the batter for a Mediterranean slant.
Also goes well with bacon and eggs etc. for breakfast.




Tavish's Ravishing British Colombia Pancakes.

Tavish Campbell, from Canada, sailed with me from Tahiti to Fiji and this is one of his recipes.

Ingredients:
   2 cups regular flower.
   1½ to 2 cups water.
   3 eggs - separated.
   2 tablespoons brown sugar.
   ½ cup cooking oil.
   1 teaspoon salt.
   3 teaspoons baking powder.
   ¼ teaspoon cinnamon powder.
   1 teaspoon vanilla essence.

Method:
In mixing bowl 1:
Stir together the sugar, vanilla, egg yolks, water and oil.
In mixing bowl 2:
Stir together the flower, baking powder, salt and cinnamon.
In mixing bowl 3:
Beat the 3 egg whites until light and fluffy.

Now pour the contents of bowl 1 into bowl 2 and mix well, then gently fold the egg whites in.

Using a non-stick frying pan over a medium heat, ladle enough mixture in and fry until golden brown on both sides.
This recipe makes about 10 to 15 pancakes.

Enjoy with cinnamon and sugar, or jam, or bacon, or maple syrup, or banana, or peanut butter, or peanut butter and banana, or... or... or...




Potato patties a la Me.

Goes well with just about any meal, but not soup.

Ingredients:
   2 or 3 potatoes.
   1/3 cup flour.
   1 egg.
   1 tablespoon brown onion soup powder.
   Cooking oil for frying.

Method:
Peel the potatoes and grate them into a bowl of sea or salted water. Let stand for a couple of minutes and drain the water off.
Beat the egg lightly, add to the grated potato and mix in. Add the soup powder, mix in. Add the flour, mix in.
Heat the oil in a pan, (use a deep frying pan or pot if out at sea), over medium heat, spoon tablespoon size amounts into the hot oil, patting down if necessary.
Fry patties until golden brown.

No notes really. You can't muck about with this one too much...
I enjoy mine with a drizzle of Worcestershire sauce.
